Parcels of Muscadelle are harvested at naturally high levels of sugar, grapes are crushed, destemmed and cooled to 10C on the way to open fermentation vessels. Batches are pumped over twice daily during two days of cold soak. Yeasts are added for a slow vinification, followed by draining and press after a single Baume drop in sugar level. Juices are fortified with neutral grape Spirit to arrest the ferments, settled and racked off solids. Batches are heat and cold stabilised, coarse earth filtered and transferred to a collection of well seasoned oak barrels for up to thirty years maturation. Upon completion, the best barrels are determined and marked for inclusion into the final Show Reserve Muscat. Alcohol 18.5%

Richly intense, yet gently luscious and velvet smooth, pronounced Muscat flavours, a concentration of raisin and fruit mince tart characters. In 1743 one of the descendants of the Moët brothers Claude Moët, who had been a wine trader in Epernay since the early 18th century, founded the Maison Moët. His grandson, Jean Remy Moët, who was a visionary with a pioneering spirit, transformed this trading company into the world's leading luxury brand which, for over two and a half centuries now, has been the veritable embodiment, around the world, of the genius of Champagne.

Within a few days, the alcoholic fermentation has transformed the sugar into alcohol with the help of selected yeasts After harvesting, the grapes are transported, pressed and then juices fermented in vats. In order to ensure a carefully thought-out and natural wine-making approach and to guarantee the essence of the fruit is given full expression, keeping a tight rein over the entire production process is of paramount importance.
